Beef enchiladas are super easy to make especially if you have a can of enchilada sauce or if you make your own. Homemade sauce is so much better and this year I even canned my own.
Here is the recipe for homemade enchilada sauce:
2 cups tomato juice
2 tsp chili powder
1/4 tsp cumin
1/4 tsp salt
1/4 tsp oregano
Now let’s make the Beef Enchiladas:
1 pound ground beef
1 tsp salt
1 tbsp vinegar
1 tsp chili powder
1/2 cup chopped onions
1 tbsp flour
8-10 flour tortillas
1/2 cup cheese
Fry beef and add salt, vinegar, and chili powder. Fry onions then add the flour. Add onions to enchilada sauce. Dip tortillas into sauce and then put some meat in. Roll them up and put them in a 9×13 pan. Pour remaining sauce over enchiladas. Sprinkle cheese on top and bake til cheese is melted. Serve with rice and refried beans.
