Trying to figure out what to have tonight for supper? Try these yummy Cheesy Chicken Enchiladas.
Cheesy Chicken Enchiladas
1/2 cup chopped onion
1 garlic clove, minced
1 Tbsp oil
2 cups chopped, cooked chicken
1 can green chilies, optional
1/4 cup chicken broth
2 tsp chili powder
1 tsp ground cumin
4 oz cream cheese
6 flour tortillas
1/4 lb velveeta cheese
2 Tbsp milk
1/2 cup chopped tomatoes
Saute’ onion and garlic in oil until tender. Stir in chicken, chilies, broth, and seasonings. Cook until heated through. Add cream cheese and stir until it melts. Spoon 1/3 cup chicken mixture onto each tortilla and roll up. Place seam down in baking dish. Put cheese, milk, and 1/4 cup tomatoes in a saucepan. Heat until cheese melts. Pour sauce over tortillas and top with remaining tomatoes. Heat in oven for 30 minutes at 300.
I find that this is a very simple dish to make as I always keep canned chicken and tortillas on hand. Also we like the velveeta cheese packs ( with jalapeños) for the top. Then I serve rice on the side.
