Our family enjoys eating Whoopie pies. We would probably eat them even more often if they didn’t take longer to make then cookies. We eat all kinds but our favorites are chocolate, pumpkin, and oatmeal.
For many years I hunted for a good recipe for chocolate Whoopie pies. Too many of the recipes that I tried produced fat, dry Whoopie pies. Now I have a recipe that makes lovely sticky Whoopie pies.
Chocolate Whoopie Pies
2 1/2 cups sugar
4 1/2 cups flour
1 1/4 cup oil
2 large eggs or 3 small ones
3/4 Tbsp vanilla
1/2 tsp salt
1 1/4 cup cocoa
1 1/4 cup buttermilk
1 1/2 Tbsp baking soda
1 1/4 cup hot water
Mix sugar, oil, eggs, and vanilla. Mix together all the dry ingredients. Add the dry ingredients to the first mixture alternating with water and buttermilk. Spoon about 1-2 Tbsp size cookies unto a cookie sheet. Bake at 375 for 7 minutes.
Mix filling while the cookies are cooling.
Filling
3 cups icing sugar
1 1/2 cups Crisco
1 1/2 tsp vanilla
3 Tbsp flour
1/4 cup milk
Mix altogether. When mixed whip at high speed for 2 minutes. Place a layer of icing between two cookies and you will have a delicious Whoopie pie!
