Our family really enjoys taco salad. For a variation we enjoy taco quiche and it is so easy to make.
Taco Quiche
2 pounds ground beef, browned
2 envelopes taco seasoning
4 eggs
3/4 cup milk
1 1/2 bisquick
1/2 cup sour cream
2 cups shredded cheddar cheese
chopped lettuce
diced tomatoes
Brown beef, add taco seasonings as directed on package. Spoon meat into 9×13 inch pan. Beat eggs, add milk and bisquick. Pour over meat. Bake uncovered at 400 for 20 to 25 minutes. Cool 5 minutes. Spread with sour cream and cheese. Top with lettuce and tomatoes. Serve with salsa.
