Sometimes we are in the middle of baking and we realize that we are missing a baking ingredient. We may go see if we can borrow from a neighbor or we might look for an item that we can use as a substitute.
I keep a list of substitutes for times when this happens.
1/2 cup brown sugar………………………..2 Tbsp molasses in 1/2 cup white sugar
1 cup icing sugar………………………………1 cup sugar and 1 tsp cornstarch. Whirl in a blender.
1 cup shortening………………………………2/3 cup oil
1 cup margarine or butter………………….7/8 cup shortening or oil plus 1/2 tsp salt
1 cup sour milk…………………………………1 Tbsp vinegar in 1 cup of milk
1 cup buttermilk……………………………….1 cup plain yogurt
1 tsp baking powder………………………….1/4 tsp baking soda and 1/2 tsp cream of tartar
1 square chocolate (1 oz)…………………….3 Tbsp cocoa, 1 Tbsp margarine
1 cup honey……………………………………….1 1/4 cup sugar and 1/4 cup water
1 cup whipping cream…………………………2 cups cool whip
10 miniature marshmallows……………….1 large marshmallow
1 cup oil…………………………………………….1 cup applesauce
