Our family enjoys camping, fires, and mountain pies. Never heard of a mountain pie? Well, you are missing out on some perfectly wonderful food.
We like having mountain pies for supper but we enjoy it even more at breakfast time. Sometimes we even have breakfast ones for supper since we like them so well.
First you need to have a mountain pie maker. This is a sandwich pie maker that goes into the camp fire. You can buy these at Walmart in the camping section.
You will need to have all your favorite breakfast ingredients. Scrambled eggs, fried bacon, sausage, ham, cheese, onions, peppers, salsa, and mushrooms are great fillings. You will also need bread. Just cheap square bread works just great.
We like to butter our breads and then lay them on the pie maker with the butter to the outside.
Then add your choice of fillings on one side of the bread. When you are finished close the pie maker with the side that has the empty bread.
If you like your bacon done nice and crisp then put it on the outside of your bread. A nice twist that we tried this summer.
Hold your pie maker above or in some hot coals in your fire. If you put it in the flames then it may burn the outside before the center is warm.
Get it nice and toasty brown on the outside and then dump it out on a paper plate. Remember to keep the hot irons away from children as they can easily get burned.
Cut your sandwich in half so it can cool off a little before you eat it. Then enjoy your wonderful breakfast sandwich!
