Chicken and Rice Casserole
1/2 cup chopped onions
1/4 cup butter
2 cups chicken, cooked and diced
1 1/2 – 2 cups uncooked rice
1 1/2 tsp. Salt
2 cans cream of mushroom or chicken soup
2 cups milk
2 cups chicken broth or water
Lightly brown onions in butter. Mix all ingredients together. Put into a 9×13 pan. Bake at 350 degrees for 2 hours stirring after one hour. Also perfect for a crockpot. Put on high for 2-3 hours.
