Don’t you all just love corn day? My children all groan when I mention that the corn is ready to head to the freezer. Last week we did our first day of corn. The day was very warm so I got up early to pick my ten 75 foot rows of corn. The children were a bit excited since we had rented a corn silker and they would not have to spend hours silking corn. A great machine it was! It had 100 ears of corn silked in 5 minutes. Very quickly the children were out of work since I could not pick that fast!
This week we did our second picking of corn. Much to the children’s disappointment we did not rent a silker. I told them that it would only be 400 ears instead of 650 like we did last week. So they spent their hours silking. They did a great job and we were done before lunch.
We cook our corn in two large canners on our stove in our garage. Once it has boiled 10 minutes then we put it in 5 gallon pails and add cold water. After adding cold water the second time it is usually cold enough for us to cut off the cob.
Between the two days I got 125 pints and my daughter got 75 small packs. We are so blessed to be able to raise and freeze such delicious corn.
