On the chilly days of winter our family enjoys a good bowl of Cream of Broccoli soup. This is one of our favorite kinds of soup and it is very simple to make.
Cream of Broccoli Soup
1 head broccoli or a frozen pack 3 cups chicken broth
4 cups milk 2 tsp. Worcestershire sauce
6 tbsp. Margarine Salt and pepper to taste
2/3 cup flour 1 cup velveeta cheese
Chop and cook broccoli. While milk is heating, melt margarine in kettle. Add flour and work into a paste. Dilute with chicken broth and cook until thick. Add seasonings and cheese. Mix all with milk, adding broccoli last. Keep warm but do not boil.
This is a very good soup to make and then put in the crockpot until you are ready to serve it. If you have it on low for awhile just remember to turn it off a bit before you want to eat. I discovered that my low was quite hot.
So next time you do not know what to make, just whip up a pot of Cream of Broccoli soup and you will be glad you did!

I like making a cheesy onion broccoli soup that is very similar you just sautè some onion in the butter when you make the cream sauce. So good served with toast.

We must think alike- we just had broccoli soup for supper last night 🙂 Your recipe looks similar to mine but a larger batch, which is what I need according to how fast it disappeared last night!
