Do you have very creative lunches this summer with the children or are you like me and have some of the same lunches over and over again? My children love to list all the lunches that we continually have. It may sound boring to you that we have some of the same lunches again and again. Hey, they are foods that the children love and there are usually very few complaints.
Let me seeing if I can do as good as the children in giving the lunch menu choices. We try to have each one only once a week so we do not get tired of them. The favorite of all is grilled cheese or ham and cheese. A very simple sandwich to make especially if you have an electric frying pan. Even my 10 year olds fight over who is going to be the one to make them.
Another favorite is egg wraps. We always have lots of eggs with all our chickens so if we have tortillas we are just about set. We will dice ham or sausages and fry up some peppers and onions and then with a little salsa we are all set to go. Some of the children think they are even better if you add some pancake syrup!
One of the most special lunches is subs. I find that Aldi’s has very good and cheap hoagie rolls. I custom make each persons sub since everyone likes them a little different. Some don’t like tomatoes or onions but most everyone’s get mayonnaise, ham, salami, mince bologna, cheese, and lettuce. Then some of us enjoy the extras of mustard, sweet peppers, or dill pickles. And I think they even taste better then Subways and they sure are a lot cheaper.
Some days we will grill hot dogs and enjoy them in buns. I have 2 boys that think hot dogs are not edible so we don’t have them too often.
The there are the hot summer days when we have everyone make their own cold sandwich. I get meat ends for .99 a lb. so we usually have a lot of picking choice of meats. Add some fresh tomatoes from the garden and lettuce and you can have the best sandwich ever!
Another favorite sandwich is BLT. With fresh tomatoes just starting they are lovely on fresh toast with lettuce and bacon. The children think that the only problem is that they are rationed as to how many pieces of bacon they can have. If every one is here then they just get 2 slices and that doesn’t make a very big sandwich!
With all our eggs, we will hard boil 2 dozen at a time and then it will be egg salad sandwiches for lunch. I know that eggs are getting to be rather expensive right now but you can still buy them from me and my hens for 2.50 a dozen. And they are fresh from the hen house so when I want to hard boil eggs I need to let them sit out on my counter for a few days so we can get them pealed.
And my last lunch is what I make when I don’t know what else to make. It is called Russian Mennonite Scrambled Eggs. It is a recipe that I got from my mother in law and one of my husband’s favorite lunches. Let me give you the recipe in case you want to try it.
Russian Mennonite Scrambled Eggs
6 eggs 1 tsp baking powder
1 cup milk 1 tsp salt
1/2 to 1 cup flour
Mix until a smooth dough, adding flour to make batter like runny pancake batter. Heat a few tablespoons of oil in a heavy skillet. Add egg mixture and fry, browning on all sides while stirring constantly, and chopping like you would do for scrambled eggs. Fry until the crumbles are all dry and well cooked. Serve with ketchup or pancake syrup.
I usually will triple this recipe for all our hungry eaters. Also I have found that if you mix the flour and milk in a Tupperware gravy shaker it is so much easier to get the lumps out.
So you have our few simple lunches. Serve them with carrots, chips, or cookies and you have a simple meal. Maybe you can let me know what your favorite lunches are so I can get a few more.

The egg recipe is very interesting! It is pretty much the same recipe (minus the baking powder) that we call “egg pancakes”. I make them in a square griddle. You have to wait till they are ready to flip, then I cut them into square pancakes (4 if I am using my square griddle, 6 or 8 if I am using my double burner griddle). I usually make tomato gravy to put on the top. Yum! Makes me hungry! 🙂 (I learned a long time ago the easiest way to mix it without lumps is put it all in the blender for a few seconds. 🙂 ) Sometime I need to try your way of frying it and see how we like it!

The boys love tortilla pizzas when we don’t have anything else on hand. Take a tortilla and spread it with pizza sauce. Add pepperoni and shredded cheese.Fold in half and microwave for 30 seconds. Vary toppings as you wish.
We’ve also taken a loaf of discounted french bread, sliced it open lengthwise, and added pizza sauce, pepperoni and cheese. Bake at 350 until hot and cheese is melted.
I never heard of Russian Mennonite Scrambled Eggs. I should maybe try it. We sell our eggs so fast that I never have an abundance here.

Those tortilla pizzas sound good. I will need to try them as pizza stuff is always a hit.
