Our Family really enjoys lazagna. Since the local discount grocery store had lazagna noodles cheap, we are trying all kinds of different lazagna. The ham and cheese lazagna was our new kind we tried last week.
If you have leftover ham it would be a great way to use it up. If you have no ham then just get the deli to slice you ham slices that are 1/4 inch thick and cut them up.
Ham And Cheese Lazagna
9-12 Lazagna noodles
1/2 cup chopped onion
2 tablespoons butter
3 tablespoons flour
2 cup milk
2 cup cottage cheese
2 cups shredded cheese (your favorite)
2 cups chopped ham
8 oz. fresh or canned mushrooms
1 tablespoon parsley
Cook lazagna noodles. While noodles are cooking, melt butter in sauce pan. Add onions and mushrooms and cook until soft. Blend in flour. Add all the milk and stir until smooth. Stir and heat on medium until thickened. When thickened, stir in cottage cheese and 1 cup shredded cheese. Stir until melted then add ham and parsley. Remove from heat.
In a 9×13 pan, layer 3 of the lazagna noodles. Place 1/3 of the ham mixture on top.
Repeat layers 2 more times and then put the rest of the cheese on top.
Bake at 350 for 40 minutes then let sit 10 minutes before serving.
