Fall is now past and we are looking toward winter. I still have a few fall pumpkins around that I had used for decorations. I hate to see them go to waste so I brought 2 large ones inside and decided to make Pumpkin Pie. First I cut up the pumpkin and took out the seeds. I then put the pumpkin pieces into a kettle with lots of water and cooked them for a long time until they were soft. You could also bake them in the oven until they are soft if you prefer.
When the pumpkin is soft, you can put it in cold water to cool it off. Next take off the skin and discard it. Put the pumpkin in a blender or masher so it gets smooth and not chunky. Now you are ready to make pie and lots of them (at least if you cooked as much as I did!).
Pumpkin pie
1 cup Pumpkin 3 eggs
2/3 cup brown sugar 2 cups milk
1/2 teaspoon ginger 1/2 teaspoon salt
1 teaspoon cinnamon
Beat all ingredients in a blender. Pour into 9 inch pie crust. Bake 45 minutes at 375 degrees on lower oven shelf until firm.
Cool pie and enjoy with whipped cream on top.
