Our family has always been a fan of Dairy Queen ice cream cakes. Several years ago I decided that these cakes look simple and I should be able to make them. After a few tries I was able to create an ice cream cake that pleases everyone. I usually customize the ice cream flavor to suit the birthday person.
Before you start make sure you have all the items you need. You will need to have a spring form pan. If you don’t have one these are easily picked up at your local thrift shop.
You will also need two boxes of ice cream, Oreos, sprinkles, chocolate syrup, and 8 oz. of cool whip. Soft icing is optional.
Start by chopping up the Oreo cookies until you have 3/4 to one cup. Layer the vanilla ice cream in the bottom of your pan. I put Saran Wrap in the bottom of mine first since my pan is not nonstick. I like to do the vanilla ice cream first so that later if it comes through the cool whip it will not show like chocolate would.
After you have the vanilla ice cream in the pan I usually stick my hand in a bag and smooth it out. Then spread the Oreo crumbs on top. Take the chocolate syrup and draw lines back and forth.
Then put the chocolate ice cream or your other flavor on top. Cover with Saran Wrap and smooth the top.
Try to get the ice cream in the pan as quickly as possible so it doesn’t melt too much. When you are finished freeze the cake overnight or until it is quite firm.
When the cake is firm, find a plate or cake taker to put it on. I use a cheap cake taker from the dollar store. Put the pan upside down on the plate and take the spring form pan off.
Take cool whip with a large icing knife and spread it around the sides. When the sides are done spread the cool whip on top. If you have an icing edger you can even make lines on the top. As you see some of the chocolate melted through the bottom. Don’t worry about that as you can clean that off after it is frozen. Then return the cake again to the freezer for at least 12 hours.
If I am in a hurry or you don’t do cake decorating then don’t worry about putting icing decoration on the cake. Just sprinkle the top with sprinkles and everyone still enjoys it.
If you want to do some decorating then make a very fluffy icing. I use the whoopie pie icing. Place the icing in a bag and using a large tip, pipe some large stars around the edges. Then sprinkle the stars with sugar sprinkles. Write happy birthday or whatever saying you wish in the middle.
Keep the cake in the freezer and remove when ready to serve. Everyone will love your delicious ice cream cake.
