I needed to make some pudding for a gathering and I thought of all the wonderful puddings that my Grandma used to make. Cracker pudding was one she made a lot. I grew up on a dairy farm so we too made puddings regularly. When the microwave came along it was so much easier to make them. No longer did we have to stand at the stove and stir like Grandma did but we could just put it into the microwave and stir occasionally.
Old Fashioned Cracker Pudding
1 quart milk
1 cup saltine crackers (smashed)
Heat 5 minutes in microwave then add:
1 cup sugar
4 eggs, beaten
Heat 4 minutes then stir. Continue to heat 2 minutes at a time and stir in between. Do this until it is thickened. Then add 1 teas. Vanilla and 2 Tbsp butter. Serve with whipped cream on top.
