I enjoy making up menus of our suppers for the week. Now that the weather is getting cooler I start thinking more about food and I have more time to make it. It is so nice to know each day what I need to be making for supper. I always tell my husband that knowing what to make is half the work.
I usually just list what we are having for supper as breakfast and lunch have so many easy options.
Monday– Chicken Rice Broccoli casserole
3 cups diced cooked chicken
1 1/2 cups rice (cooked)
1 head or package broccoli, cooked
4 Tbsp butter
4 Tbsp flour
3 cups broth and milk
1/2 tsp cumin
1 tsp salt
Make white sauce with the last 5 ingredients. Stir in rice and chicken. Put in casserole dish and top with broccoli. Cover and bake at 350 for 30 minutes. Top with some cheese and bake until melted.
Tuesday– Quick Cheeseburger casserole
1 pound ziti pasta, cooked
1 pound hamburger, fried with some onions
1 can cream of mushroom soup
1 can tomato soup
3/4 cup shredded cheddar cheese
Mix soups and cheese with hamburger until warm. Add to pasta. Serve with a vegetable and salad and you have a quick meal. This is easy enough for my 10 year olds to make.
Wednesday– Crockpot Ranch potatoes with chicken
2.5 pounds potatoes sliced ( I even leave the skins on)
6 bacon slices (fried)
1 pkg cr cheese (8oz)
1 can of mushroom soup
1/4 cup milk
1 envelope dry ranch dressing
3 tbsp chopped onions
2 pound boneless skinless chicken thighs
Put chicken on the bottom of the crockpot ( large crockpot). Add sliced potatoes. Mix the rest of the ingredients together and pour on top of the potatoes. Heat on high for 4 hours.
Serves 10 people. I like to stir everything together before serving.
Thursday– grilled sausage
Green beans
Mac and cheese ( for this I make a white sauce with cheese and pour it over
the macaroni)
Friday– Pizza and salad
We love homemade pizza so almost every week I make 4 large pizzas. Usually 2 of them are chicken bacon ranch, one is meat and cheese and one is supreme.
Saturday– lunch is sausage gravy over pancakes
Supper is grilled Italian chicken sandwiches
I had planned on getting pictures of each of the meals but somehow they always got eaten without me remembering. What is on your menu this week?
