Just thought you all might need an idea for your dinner tomorrow or for making up your menus. This is such a delicious and easy casserole and you can put it in your crockpot and forget about it until you are ready to eat.
12 corn tortillas ( I use flour ones)
2 cans enchilada sauce
2 cups cheese
1 pepper
1 can black beans ( 2 cups)
1-2 cups diced chicken
Combine pepper, beans, chicken, and 1/4 cup sauce. Mix well. Put 1/4 cup sauce on the bottom of your slow cooker. Layer 3 tortillas on top. Add 1/3 of chicken mixture. Top with 1/2 cup cheese. Add another layer of tortillas, 1/3 of the chicken, and 1/2 cup cheese. Repeat the layer again. Top with remaining tortillas and the rest of sauce and cheese. Cook 3-5 hours on low or 2 hours on high.
This is a layer of my chicken mixture. I used extra chicken as I wanted a full crock pot.
