This rice goes real well with enchiladas.
Southern Rice
1/2 cup chopped peppers
1/2 cup chopped onions
3 Tbsp butter
1/4 tsp oregano
1/2 tsp garlic powder
1/2 tsp salt
2 tsp salt
2 tsp chicken bouillon
1/8 tsp cumin
1 cup rice
2 cups water
Lightly fry the peppers and onions in the butter. Add seasonings, rice, and water. Bring to a boil, then simmer for 20 minutes. This also could be baked for one hour or put in the instant pot.
